Chopped Chicken Liver, which I guess you could call pâté de foie de volaille if
you were so minded.
It is tasty, and as easy as 1, 2, 3, 4:
1 lbs. chicken livers, drained, and sauteed.
2 Tbs. schmaltz*
3 onions chopped and sauteed
4 hard-boiled eggs
Rough chop the cooked ingredients, mix them, and put the mixture in a food processor.
Run the food processor until you like the texture.
Add salt and freshly ground black pepper
* Rendered chicken fat, but you may vary the type and amount of fat to your liking.
